  • 1/4 cup of extra virgin olive oil

  • 1 onion, chopped

  • 2 cloves of garlic, minced

  • 2 carrots (diced)

  • 2 zucchini (diced)

  • Feel free to add or sub additional vegetables to your taste

  • 2 cups of ripe tomatoes (canned or fresh)

  • 1 tablespoon fresh basil, chopped or (1 tsp of dried basil)

  • 2 teaspoons fresh oregano, chopped or (1 teaspoon dried oregano)

  • 4 cups of vegetable or chicken broth

  • 4 cups of stale Tuscan bread (or any crusty bread)

  • Salt and pepper, to taste (kosher salt is best)

  • Parmesan cheese, for garnish (optional)

Preparing Your Tuscan Bread Soup Recipe


Step 1: Gather your ingredients

This step is what will make this go smoothly. Get all your ingredients out and then prepare them according to the recipe. This is known as mis en place. Once you have all this completed it is time to turn up the heat.



Step 2: Sauté the Aromatics


In a large pot, heat the olive oil over medium heat. Once warmed (you'll know by the shimmer of the oil as you tilt the pan), add the chopped onion and sauté until it's translucent, which should take about 5 minutes. Then, add the minced garlic and cook for 1-2 minutes. By adding the garlic after the onion it keeps it from burning. This is the first step in getting the flavors to develop.

Step 3: Add the Vegetables


Next, add in your zucchini and carrots and sauté to develop more flavor, about 4-5 minutes. Cook until there is a bit of brown color on the vegetables. The key is to not stir too often, as this leads to the pan cooling down too much. We want to develop color and a fond on the bottom of the pot.


Now, pour in your ripe tomatoes. If using canned, crush them with a spoon. Add the basil and oregano, then let this mixture simmer for about 10-15 minutes. This again will build more flavor.

Once your tomatoes are bubbling and aromatic, add the broth. Stir well and bring the mixture to a gentle simmer. At this point add the salt and fresh ground pepper, adjust to taste.


Step 5: Add the Bread and Simmer


Tear the stale bread into chunks and add it to the pot. Mix thoroughly. The bread will soak up the broth, giving the soup a thick and savory texture. Let it simmer for another 10-15 minutes. Don't forget to taste and season on last time.

If you have leftovers, they store well in the fridge for about 3 days. To reheat, warm it on the stove, adding a splash of broth or water if it has thickened too much. It will also freeze well, but I doubt you will have any left for this step.
