And the best part, it is easy to make and takes about 45 minutes from start to finish.

The Ingredients You'll Need


Start by gathering these ingredients for a stunning meal, remember Mis en Place!


For the chicken:
  • 4 boneless, skinless chicken breasts

  • 4 oz Brie cheese, sliced

  • 1 medium apple, (Honeycrisp or Granny Smith have a wonderful balance of sweetness and tartness, but Gala and Fuji, or any crisp apple works here)

  • Fresh minced thyme

  • Salt and pepper to taste

  • 1 tablespoon olive oil

  • 1 tablespoon butter


For the Bourbon Apple Cider Glaze:

  • 1 cup apple cider

  • 1/4 cup bourbon

  • 1 tablespoon Dijon mustard

  • 2 tablespoons cold butter



Make sure everything is prepped and ready to go. This will make cooking a breeze!


Beginning the Bourbon Apple Cider Glaze


Before we get started prepping the chicken we need to get the glaze started. Combine the apple cider, brown sugar, and Dijon mustard in a small saucepan. Simmer over medium-high heat until it reduces by about 2/3. Next, add in the bourbon and continue simmering for several minutes until the glaze thickens. This will take about 15-20 minutes, just keep an eye on it so it does not burn, If it reduces faster, just turn it off until the chicken is in the oven.



Preparing the Stuffed Chicken


First, let's prepare the chicken. Use a sharp knife to carefully butterfly each chicken breast, slicing them 3/4 of the way through to create a pocket for the tasty filling. Start the cut on the thickest part of the breast.

Hold your hand out flat to keep the chicken from moving when you make the cut, keep fingers up and out of the way.

Cut through to about an inch from the other side.

Next, season both sides of the chicken with salt, pepper, and thyme. Seasoning well is vital for ensuring every bite is packed with flavor.


Preparing the Stuffing


Cut 1/4 inch thin slices lengthwise across the Brie, you will need 8 total slices.

Wash and dry apple. Cut apple into quarters, cut out core, slice each quarter lengthwise making thin slices.


With chicken breast open, kind of like a book, lay Brie on the bottom half of the chicken breast. Next, lay apple slices on top of the Brie and fold over the top part of the chicken breast. You can choose to use toothpicks or kitchen twine to secure the pockets if needed, making sure the cheese and apple stay inside while cooking. I usually just opt to let some of the Brie ooze out.


Cooking the Chicken


Preheat your oven to 350°F (~175°C). 

Next, heat a large oven-safe skillet over medium-high heat. Do not use any pan with a plastic handle or anything with a non-stick coating.

Add olive oil and butter once it's hot, place each stuffed chicken breast, topside (presentation side) down in the skillet.


Tip: If you heat any pan first and then add the butter and oil what you cook won't stick much if at all.


Sear the chicken for about 3-4 minutes, or until a nice golden crust forms, then flip it carefully. This adds flavor and locks in the juices.


Once browned, transfer the skillet to the preheated oven. Bake for an additional 20-25 minutes or until the chicken reaches an internal temperature of 165°F (74°C).

Once the chicken is done baking, remove pan from the oven (remember to use a hot pad, that handle will be HOT!) remove the chicken breasts to a plate and let it rest for about 5 minutes before slicing. This allows the juices to redistribute, keeping your chicken moist and flavorful. Just cover it up with another plate, placed upside down to keep it warm.


While the chicken rests, it's time to finish the sauce.


Plating and Serving


Slice the chicken breasts and generously drizzle the bourbon apple cider glaze on top. For a complete meal, serve alongside roasted vegetables or a light salad.


Final Touches


To enhance flavor and presentation, consider adding fresh thyme leaves or a sprinkle of crushed pecans for garnish. This small touch not only adds visual appeal but boosts flavor too!
